Cucumber flavored leaves and flowers are used in salads, but they turn pink on contact with acids like lemon juice or vinegar. They are also added to wine based drinks and candied. Cold borage soup is a summer favorite.
Cold Borage Soup
Ingredients
- 240 ml borage leaves
- Zest and juice of (1) lime
- 240 ml cilantro
- 240 ml unflavored yogurt
- 1 pepper
- 500 ml water
- Salt and ground pepper to taste
Instructions
- Mix all ingredients in blender except salt and pepper
- Pure on high speed or until homogenized
- Add salt and pepper to taste
- Chill for at least 2 hours
- Garnish with borage flowers
